I'd replace half the sour cream with a half-block of cream cheese -- that should probably firm it up a bit. Also the crust was too greasy. A store-bought graham cracker crust would have been better. Your dinner sounds so yummy! I looked at the recipe for the Trader Joe pie, maybe I'll try that next year. This year I cheated and bought a Marie Callendar frozen pumpkin pie. Well - the reason is that in previous years I've noticed that by the time dinner has been eaten, there is not much enthusiasm left for pie, even if I took time to make something special. So this year I went this route. It was pretty good. But John was a little disappointed in me I think. That’s a – maz – ing.
